Yee Sang with Golden Celestial Dressing (ENG/CH)
Ingredients
Ingredients for Golden Celestial Dressing:
2 golden pears
3 tbsp oil
3 tbsp vinegar
¾ cup plum sauce
¼ tsp sesame oil
¼ cup water
2 tbsp calamansi juice
1 can MARIGOLD Sweetened Creamer
1 tbsp black sesame seeds
3 tbsp preserved winter melon
Ingredients for Yee Sang:
½ pkt wanton skin
8 slices fresh salmon1 tsp pickled ginger
½ cup carrot, julienned
½ cup rock melon, julienned
½ cup purple cabbage, julienned
½ cup Japanese cucumber, julienned
½ cup daikon, julienned
½ cup red apple, julienned
½ cup walnuts, crushed
½ cup pomelo
¼ cup almond flakes
1 tbsp sesame seeds
4 pcs kaffir lime leaves
1 tsp Chinese five-spice powder
1 tsp white pepper
1 tbsp dried cranberries
Method
Golden Celestial Dressing
- Blend golden pears.
- Heat oil and saute the blended pears for 3 minutes.
- Add vinegar, sesame oil, calamansi juice, water, plum sauce and bring it to a boil. Add MARIGOLD Sweetened Creamer and bring it to a boil.
- Stir in sesame seeds and preserved winter melon.
Yee Sang
- Slice the wonton skin and fry in hot oil for 30 seconds.
- Place all ingredients in an appropriate position as ingredients with the same colour should be placed at the opposite location.
- Pour sauce over yee sang, toss and serve immediately.
Chef's Tip:
Cook pears immediately after blending to avoid oxidation.
